 Grandma’s Groovy Cheese Flapjack

If ever there was a budget bite, this is it!  It’s also a Low GI vegetarian dish and while it’s wheatfree, I can’t promise you gluten free.

You can change this around and add different herbs or perhaps some caramelised onions and garlic, or pumpkin seeds even, it’s up to your own individual taste and creativity in the kitchen.

Ingredients

8 Oz Porridge Oats
6 Oz organic grated mature cheddar
3 Oz organic unsalted melted butter
2 large organic eggs
1 grated carrot
1 handful of chopped fresh coriander
Maldon salt and freshly ground pepper to taste

You can literally throw all of this into a large mixing bowl (I add the eggs last to bind) and stir with a wooden spoon until it’s all nicely blended. Spread the mixture evenly, making sure it is level around the sides, into a non stick swiss roll tin. 

A nice touch is to garnish before cooking with vigorous splashes of Worcestershire sauce and hey presto! Grandma’s Groovy Cheese Flapjack is ready to go in the oven…for a mere 25 minutes on 175 degrees heat.

When it’s done, remove from the oven and lightly slice it into 16 pieces while it’s still in the tin.  Wait until it cools and carefully remove it with a flat spatula and dress up with a colourful salad before eating!

For this lunchtime treat, I made a simple salad mixing up rocket and lambs leaves and sliced tomatoes with a simple dressing topped with pumpkin seeds and pine nuts – add a bowl of Paupers Lentil Soup if you dare!
